Jose, Rosi, Luis, and Maribeth have all been with us for years. We are all great friends, and have watched our families grow. Jose came to us a chef. He and his family had been gold miners, and when the park was formed, Jose chose to train as a chef. He was the head chef at Lapa Rios for several years, and has worked for us now for nine years. Rosi has worked at Iguana also for the same time. She came to us as a maid, and has become an excellent chef, making fresh pastries every morning, followed by such delicacies as eggs benedict, huevos rancheros, and banana crepes. Luis is both a chef and bartender, who like Jose, worked at Lapa Rios for many years, and whose mother is still a gold miner somewhere near Carate. Maribeth grew up on the other side of the Golfo Dulce, with no road access. Her mother was a great chef and taught Maribeth. She is a natural.
All live in nearby Puerto Jimenez. Jose is the Iguana Lodge's dinner chef and the father of one son; Rosi is the breakfast chef (specializing in her homemade pastries) and the Friday night Pasta Chef as well as mother of two; Luis is a bartender and part time chef at the Pearl (as well as fisherman extraordinaire) - he has two young daughters; and Maribeth is the mother of one. Each realizes the importance of detail and presentation, and takes great pride in his/her food. Pura Vida.
